Hey
I have a 94 ZX 11 that I had the carbs taken apart and cleaned a year ago because of same problem.

Bike starts pretty good, idles fine and doesn't overheat.
As I start to throttle up engine stumbles and dies if I don't let out of it.

Any thoughts?

Check your slide diaphragms. Pull the airbox and blip the throttle and watch to see if the slides come up. You may need to recheck the float level too and see where that goes.

Did the bike sit a long time or have you been riding it a lot?

That or the bike has been modified, like the 'float-bowl [vent] mod' and something wasn't done or reconnected properly.
