Can anyone tell me what wires go to the sensor there are two wires not sure which is + and - just bought the bike as a project it was wrecked and the wires where just there. Got the sensor but don't know which is which or would it matter

If you are talking about the temp sensor on the thermostat housing, one plugs onto the sensor and the other is a ground wire which goes to the housing bolt.
That is the fan switch. Wiring diagram shows a blue/white wire and a black/blue wire. Blue/white wire is connected to the fan while the black/blue wire goes back to the fan fuse in the junction box.
