Doing carb rebuild n jet kit, overhaul of entire machine... How difficult are valves for a non mechanic? Any pointers as I prepare to nearly disassemble the entire bike?

Get yourself a good service manual before tackling the valves. It is outlined in detail how to do it. Be organized, clean and NOT in a hurry. You don’t need to be a mechanic but you should be somewhat mechanically inclined. Proper tools and decent work space to do the job. Only specialized tools you will need are feeler guages to measure the clearances.
