You can gain top end speed by going smaller in the back and/or larger in the front. However, if you put too much gear on there the bike wont be able to pull it all the way to redline. How much top end speed do you really need? Sounds like you'll be sacrificing performance at 'reasonable' speed (whatever that is) for a top end gain that you'll rarely if ever use.
